This position serves as the operational backbone of the culinary department, ensuring that every aspect of food and beverage service aligns with brand standards and client expectations. The role exists to bridge the gap between high-quality production and financial profitability, creating an environment where guest satisfaction and employee growth thrive simultaneously.
In this capacity, you will manage the entire culinary workflow, from daily line checks and expediting to the strategic engineering of menus. You will be responsible for maintaining rigorous quality control across all outlets, including restaurants, room service, concierge, and banquet events. Your day-to-day involves working side-by-side with kitchen staff to model operational standards, ensuring that ticket times are met without compromising food quality or presentation. You will also lead the charge in menu development, conducting internal and competitive analyses, and overseeing the training of teams on new items and updated service records.
Beyond the kitchen floor, this role requires a strategic approach to resource management. You will oversee labor scheduling to maximize efficiency, manage kitchen expenses to drive hotel profitability, and assist in the preparation of the department budget. By adhering to CSM procurement guidelines and maintaining company assets, you ensure the department operates sustainably while delivering exceptional culinary experiences.
