Pastry Chef (Lead Bakery Cook)

About the Role

As a Pastry Cook 1 at Aulani, A Disney Resort & Spa, you will oversee the daily operations of all bakery outlets and assist with the culinary supervision and execution of menu categories and specific recipes. Your role ensures the timing, quality, temperature, portion, and presentation of all bakery items meet the high standards of our Resort and restaurant outlets, as well as banquet events. You will work closely with Leads and Chefs to deliver exceptional bakery items and assist with specific allergy requests.

Day in the Life

You will perform various pastry techniques including scaling, mixing, proofing, baking, decorating, and finishing. You will prepare products and replicate recipes according to guidelines, often with minimal supervision, while maintaining proper food safety, sanitation, and HACCP guidelines throughout the bakeshop. Your day involves checking and maintaining proper temperatures, producing quality food products, and portioning food using proper control and plate presentation.

In this role, you may occasionally assist in creating and decorating cakes, wedding cakes, and custom amenities. You might be required to communicate with Guests on stage to explain cooking techniques or answer questions, and you may conduct promotional cooking demonstrations. You will also be responsible for monthly inventory, daily food orders, and assisting with Cast Member training and bakeshop administration.
