The Executive Sous Chef serves as a senior culinary leader dedicated to supporting the Executive Chef in the daily management of kitchen operations. This role is pivotal in upholding Holbrook standards for food quality, team leadership, sanitation, and resident and guest satisfaction. The Executive Sous Chef is expected to lead service, maintain rigorous operational standards, and step in as the primary culinary leader whenever necessary to ensure seamless daily operations.
In this hands-on position, you will work alongside the Executive Chef to direct kitchen execution, providing coaching and station support during service. Your day involves ensuring every plate leaving the kitchen meets exacting standards for flavor, temperature, portioning, and presentation. You will oversee menu preparation, production planning, and the execution of daily features, events, and catering for residents and guests.
A significant portion of your time will be dedicated to maintaining high standards for sanitation, food safety, and HACCP compliance, including managing line checks, prep lists, and inventory rotation. You will utilize tools like TOAST and various ordering systems to support accurate forecasting and purchasing. Beyond the kitchen, you will manage vendor relationships, monitor food and labor costs, and respond to the needs of residents and guests with urgency and a hospitality-first approach.
Candidates selected for this role will be invited to participate in an interview process designed to assess culinary expertise, leadership capabilities, and cultural fit.
