Legends|ASM Global, the leader in privately managed public assembly facilities, offers an excellent opportunity for a Cook Lead at the Long Beach Amphitheater. This role is integral to maintaining the high standards of food production and service expected at our premier venues.
Please note that employees at the Long Beach Amphitheater are covered by a collective bargaining agreement with Unite Here Local 11, and union membership is a condition of employment.
In this position, you will provide direction to the culinary team, ensuring all assigned menu items are produced efficiently and consistently. You will serve as a key link between the Executive Chef and the kitchen staff, upholding Legends' specifications, recipes, and techniques while maintaining rigorous sanitation standards.

Key Responsibilities
- check_circleProvide direction to cooks on production of assigned menu items
- check_circleFollow Executive Chef and Sous Chef assignments for opening and closing procedures
- check_circlePrepare food items by complying with portion size and quality standards
- check_circleMaintain cleanliness of kitchen including coolers, storage, shelves, and drains
- check_circleFollow and encourage team to adhere to all safety policies and procedures
- check_circleIdentify and store meats, poultry, seafood, and other food items according to standards
- check_circleParticipate as a team player in preparation, service, and delivery of product
- check_circleMaintain HACCP standards for food temperatures, rotation, and sanitation
- check_circleEnsure food preparation equipment is clean, sanitized, and in safe operating condition
