As a Culinary III associate, you will be responsible for advanced food production, preparation, and à la carte line cooking according to company standards. You will perform a variety of cooking procedures including sautéing, braising, wood fire grilling, frying, blanching, emulsifying, flat bread oven baking, poaching, and steaming. In the pastry kitchen, you will handle baking, measuring, tempering, and proofing.
You will utilize advanced knife skills to prepare food items and communicate timing with other stations to ensure all food is ready simultaneously for each order. Accuracy in delivery is essential, particularly for banquet events. You will produce food according to recipe cards and established plate presentations, while maintaining high standards of cleanliness and organization in walk-in coolers, production areas, and general kitchen spaces.
