About Olde Mecklenburg Brewery

Founded in 2009, The Olde Mecklenburg Brewery (OMB) is a premier destination for craft beer in Charlotte, NC. We brew exclusively to the German Purity Law of 1516 (Reinheitsgebot), using only water, barley, hops, and yeast. This commitment to tradition and authenticity defines our culture and runs through every aspect of our operations.

Our original location in Charlotte's Lower South End features a state-of-the-art production facility, a full-service restaurant, and a one-acre biergarten. In Spring 2024, we expanded to a second location in Ballantyne—a two-story, 14,000-square-foot restaurant and biergarten designed to host our growing community. OMB is proud to be an iconic representation of German brewing tradition in the South and remains deeply involved in the local community.

About the Role

As a Lead Prep Cook at our Ballantyne location, you will serve as a vital member of the Culinary Management Team, bridging the gap between the Culinary and Service teams. Your primary mission is to lead our prep operation, setting the standard for quality and efficiency that defines the OMB brand.

In this role, you will oversee daily prep operations, establishing prep pars and prioritizing tasks to ensure the kitchen stays ahead of service. You will be responsible for conducting regular quality checks, monitoring inventory levels, and managing temperature logs to maintain the highest standards of food safety and craftsmanship. Beyond the technical aspects of the kitchen, you will play a key leadership role by training and mentoring prep staff, fostering a positive and collaborative work environment where everyone embodies our core values.
